Knotweed honey is monofloral honey, meaning the bees producing it extract nectar from only one source. Japanese Knotweed is a member of the Buckwheat family and like Buckwheat honey it is very dark. However the taste of Knotweed is totally different than Buckwheat honey. It's taste is mild and fruity or berry like, which many find delightful. Knotweed honey is good with cheeses, fresh fruit and nuts. Try chevre or blue cheese and some apple or pear.
