    Raspberry Honey
    The raspberry is the edible fruit of a multitude of plant species in the genus Rubus of the rose family. Most raspberries have shoots that are biennal (meaning shoots grow in the first growing season and fruits grow off of those shoots during the second growing season.)
     
    This thorny shrub has springtime clusters of white, 5-petaled, rose-like flowers that give way to red raspberries that mature in summer. The fruit itself, consists of small kernals. Before pollination raspberries consist of a mere 15-27 kernals, after pollination there are a whopping 45-90, and the pollinated raspberries weigh approximately 1/3 more.  
     
    A unique attribute of Raspberry Honey is it's high level of crystallization. The honey will often crystallizes as soon as it leaves the comb, so you'll often find this in creamed form. One of the lighter berry honeys you won't be disappointed in the taste!
